Sunday Stills "Ethnic Foods"

The challenge this week is Sunday Stills "Ethnic Foods" photos.  My hubby is English and  Pennsylvania Dutch, which is German, and grew up in southeastern PA. He grew up with Scrapple,


Sweet Bologna (which is a whole lot better than Lebanon Bologna)


and Pot Pie, which I don't have a picture of, but its a homemade noodle cooked in chicken broth. I am a mixture of Swedish, English and whatever.  I grew up in northwestern PA, but on meat, potatoes and a vegetable, normal vegeatables. I didn't even know what broccoli and cauliflower were until I went to college.

We cooked a rib roast on the grill yesterday, while visiting Sara, Jake and Makenzie in CO. Makenzie, 2 1/2, is coming home with us for a week, so I'll have lots of play time this week with her and cousins Caden, who is also 2 1/2 and Tyler (3 1/2 mo).


Hubby first trims a little fat off,


Then he salts and peppers both sids, and places it on the tray, top fat up.


 Next, we spread just a little olive oil across the top and on the bottom, so it doesn't stick it stays juicy.


He covered it with a tent of  tin fuel, to keep in the moisture.


On to the grill, an hour at 250 degrees, then another 2 hours at 350 degrees.


Checking the temp... almost done at at 170.


Done to perfection! The roast was so juicy.


Ready to eat, along with baked potatoes an onions, cooked on the grill, too.

Sorry to be so late getting up these photos.  We had to eat first, then I was too full!

I could go for a big slice of that roast, and a baked potato with the works. YUM!! :)

YUM! I'm in Pa today, north of Scranton and had a perfect lunch at a mom and pop diner..:-)
